Take a gallon of gusken wine put to it of saige rosmary runing time lavender a very litell hand full cubibs cardinume french gallingall set well caraway seeds fenell seeds cloves mace nutmege ginger of each a french crowne waith that is a drame of red roses mints peletary of the wall of each a good handfull sinomone and any seeds of each 2 drams beat the spices resanable small and brus the hearbs


M' fuse m' the wine over night m' a limback you may draw a pint of the best of the second of the third of each a pint


Modern English Translation:

Take a gallon of wine from Gascony. Add sage, rosemary, thyme, lavender, a small handful of cubebs, cardamom, French galingale set well, caraway seeds, fennel seeds, cloves, mace, nutmeg, ginger (a French crown worth), a dram of red roses, mint, peletary of the wall of each a good handful, cinnamon, and any seeds of each 2 drams. Beat the spices until reasonably small and bruise the herbs.

Infuse in the wine overnight in an alembic. You may draw a pint of the best of the second or the third of each a pint.
