Salt is a mineral compound also called sodium chloride. Salt can be obtained from seawater or from the mineral halite. In seventeenth century England, salt was obtained through the panhouse process (a panhouse is a structure containing iron pans heated by coal, with flues to release smoke) or through solar (seawater is funneled into shallow basins and left to evaporate).
Salt is used for preserving food and seasoning, and is also necessary for nerves, muscles, and fluid balance in the body.
Elizabeth Dyke used salt for preservation, seasoning savory foods, a few sweet dishes, and in medicinal recipes, such as for gout.
